Traditional Swiss Fondue






For 4 persons:

1 clove garlic, peeled and sliced

2 cups dry white wine

1 pound (4 cups) Swiss cheese shredded

1.5 tbsp flour

3 tbsp Kirsch or other strong cherry-flavored liqueur

Grated nutmeg or freshly cracked black pepper

Italian or French bread cut into 1-inch cubes

 

Rub the pot with the peeled and sliced garlic, and then discard it.

Pour in the wine and heat until it begins to simmer.

Toss the flour and the cheese together then add them to the wine, one handful at a time, stirring after each handful, until the cheese is melted.

Keep the heat low and add the liqueur and spices to taste.

 

We recommend that you use an electric fondue pot. Otherwise, use a round casserole or a chafing dish.
